Breakfast cake with fruit, nuts and mascarpone
Preparation: 10 minutes
Cooking time: 20 minutes
Ingredients (for 1 small cake):
- 100 g mixed nuts
- 150 g of blackberries
- 2 tablespoons. in s. mascarpone (100 g) 2 tbsp. in s. walnut paste (40 g)
- 1 egg + 1 egg yolk
Special materials: cake form + parchment paper
- Preheat the oven to 180 ° C.
- Separate the egg yolk and white. Chop the walnuts thickly with the walnut paste and egg white. Line a form with parchment paper and pour the mixture into it. Pack well in the corner.
- Mix the mascarpone with the two egg yolks and then add the fruit. It’s okay if some are pureed, but the goal is not to puree them either. Spread the mascarpone-fruit mixture over the walnut dough in the form. Put in the oven for 20 minutes. The top layer is creamy delicious and the nuts are crunchy!
