Gabon: discovery of mezana, taro puree from the province of Ogooué-Ivindo

#Gabon : The seasonal market of the G6 Dedicated Women’s Association (mark of Ogooaué-Ivindo province, Gabon 6th region) has just broken into the camp in Libreville. This annual meeting, whose vocation is the promotion of the cultural assets of this locality, leaves behind beautiful memories.

Under the stands that were defeating the call of visitors, the culinary specialties of Ogooué-Ivindo were the most popular. This is the case of mezana, a kind of puree made from taro tuber prepared over a wood fire.

Taro is a vegetable with popular roots on the African continent. The way of consuming it obviously varies according to the country and circumstances. In the northeastern part of Gabon, among the Fang peoples, this peeled, washed and cooked over low heat can serve as an accompaniment to any meal. It can also be prepared as a puree and served with shellfish or smoked fish. It is an economical and satisfying recipe, as one of its specialists, Marie Rose Melighe Me Ngwa, explained to us.

“In the beginning, when I came, in order not to take time, I cut my tarot. I peeled, cut and washed them. I already had my smoked fish. I set it on fire. I started by adding onions. I added the oil, garlic and taro. But first I let the taron blush. After I put the water and when I threw it, I threw some pepper. It is a typical Ogivin dish (by Ogooué Ivindo). Because I have traveled and nowhere else have I seen this way of doing things in other localities. Elsewhere, dessert puree is made by adding sugar. “Anyway, my dish is salty and I added peanut leg”, she explains in front of a gathering of young girls already acquired from this recipe.

A few steps away from where Marie Rose finishes cooking her mythical mezana dish, the stadium for tasters gradually fills up to go to the table.

“The recipe is delicious. All the ingredients are there. Especially since there we have vitamins that contribute to the rebuilding of some dead cells in our body. In my youth I consumed it and until then I have prepared it when I have little time, especially on Sundays “, says Jeannine Nsé, a taster.

Note that most of the provinces of Gabon have cuisines for which they are known. But because of its cosmopolitan character, that of Ogooué Ivindo offers a wide variety and you will be spoiled for choice.
