Cowboy caviar is a Texas-inspired salsa made with a variety of colorful veggies and beans. It’s a healthy and flavorful snack that’s perfect for parties, game days, or just a mid-day snack. Plus, it’s super easy to make and can be customized to your liking!
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1/2 red onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 cup chopped fresh cilantro
2 cloves garlic, minced
1/4 cup olive oil
1/4 cup red wine vinegar
1 tablespoon sugar
Salt and pepper to taste
This recipe makes 6-8 servings.
In a large bowl, combine black beans, corn, red onion, red and green bell peppers, cilantro, and garlic.
In a small bowl, whisk together olive oil, red wine vinegar, sugar, salt, and pepper.
Pour the dressing over the veggie mixture and toss to combine.
Chill the cowboy caviar for at least 30 minutes before serving to allow the flavors to meld together.
Serve the cowboy caviar with tortilla chips for dipping. Enjoy!
