- 1½ pounds russet potatoes, diced into 1/2″ cubes
- 1 pound smoked sausage, sliced
- 2 tablespoons olive oil
- 1 tablespoon butter
- ½ teaspoon seasoned salt
- ½ teaspoon Italian seasoning
- ½ large red bell pepper, diced
- ½ large green bell pepper, diced
- 1 small onion, diced
- Black pepper to taste
- Shredded parmesan cheese, for garnish (optional)
In a large pan, sauté the diced onion in 1 tablespoon of butter over medium heat until the onion becomes translucent. Once cooked, remove the onion from the pan and set aside.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper. Stir to combine.
Cover the skillet and simmer the potato mixture, turning occasionally, for 15 minutes or until the potatoes are somewhat softened.
Add the sliced smoked sausage to the skillet. Continue to cook, uncovered, for another 10 minutes, stirring occasionally.
In another pan, heat 1 tablespoon of olive oil and sauté the diced red and green bell peppers until they are soft but still crisp. Add the cooked onions back into the pan and stir to combine.
Combine the onion and pepper mixture with the potato and sausage skillet. Stir well.
If using, sprinkle shredded parmesan cheese over the top for garnish.
