Triple Chocolate Mousse Cake Recipe

Ingredients

For the Cake:

  • 5 eggs
  • 150g powdered sugar
  • 135g wheat flour

  • 8cl peanut oil
  • 150g dark chocolate

Other:

  • 10g soft butter
  • 10g wheat flour
  • Enough for 6 people

Instructions

For the Cake:

  1. Preheat the oven to 200°C (392°F). Grease the baking pan with butter and dust it with flour.
  2. Mix the flour and cocoa powder in a bowl.
  3. In a blender, whisk 3 eggs and sugar until the mixture is very foamy and triples in volume.
  4. Gently fold the flour and cocoa mixture into the egg-sugar mixture and pour the batter into the prepared pan.
  5. Bake at 200°C for 20 minutes. Allow the cake to cool completely.

For the Ganache:

  1. Place chocolate chips in a salad bowl.
  2. In a saucepan, heat the cream until it boils, then pour half of it over the chocolate chips.
  3. Once the chocolate is melted, stir gently, starting from the middle of the bowl and working towards the edges.
  4. Add the remaining cream and continue stirring until smooth. Let it cool.

For the Glaze:

  1. Melt butter and chocolate in a double boiler.

To Assemble:

  1. Once the cake has cooled completely, cut it into three slices.
  2. Place a layer of ganache between each slice of cake and finish with a layer of ganache on top.
  3. Pour the warm glaze over the cake, covering it completely.
  4. Leave the cake in a cool place and always keep spare portions for indulgent moments.
