8 oz elbow macaroni
2 boneless, skinless chicken breasts, cut into bite-size pieces
Salt and pepper to taste
2 tbsp olive oil
1/4 cup sun-dried tomatoes, chopped
2 cloves garlic, minced
2 cups fresh spinach leaves
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk
1 cup grated Parmesan cheese
1/2 tsp dried basil
1/2 tsp dried oregano
Cook the macaroni according to the package instructions until al dente.
While the macaroni is cooking, season the chicken with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat.
Add the chicken to the skillet and cook for 5-7 minutes, or until browned and cooked through.
Remove the chicken from the skillet and set aside.
Add the sun-dried tomatoes, garlic, and spinach to the skillet.
Cook for 2-3 minutes, or until the spinach is wilted.
Remove the vegetables from the skillet and set aside.
In the same skillet, melt the butter over medium heat.
Add the flour and whisk to combine.
Gradually whisk in the milk and cook for 5-7 minutes, or until the sauce has thickened.
Stir in the Parmesan cheese, basil, and oregano until the cheese is melted and the sauce is smooth.
Add the cooked macaroni, chicken, and vegetables to the skillet.
Stir to combine and cook for 2-3 minutes, or until heated through.
